Food Checks for Safety Standards

Performing food checks is about guaranteeing the best quality of our products from their delivery to the customer. The aim is to ensure that food is safe for consumption.

Process

Check all the goods for:

  1. The integrity of the packaging of the products;

  2. The consistency of the contents;

  3. Odors, if any;

  4. Check whether allergens are specially labeled;

  5. The temperature of frozen goods, refrigerated products, fish and fresh meat.

Important:

Faulty or expired products will not be sold and must be booked out!

7. Moreover, it is important that:

a. Packaged fruit/vegetables must not be opened;

b. As soon as a single fruit, vegetable, etc. is no longer flawless, the entire package is booked out;

c. Fruits and vegetables should be handled gently to avoid bruising;

d. Check the internal temperature of the products and the refrigerator temperature daily;

e. All newly delivered refrigerated products must be put away within the first 20 minutes of delivery.

8. Upon delivery, make sure that the temperature of the products does not exceed the following temperatures:

a. Frozen products: min. -18°C (for a short period of time it may also drop to -15°C);

b. Dairy products: max. 8°C;

c. Fresh meat and meat preparations: 4°C max;

d. Chicken and poultry preparations: 4°C max;

e. Ground beef/minced meat: 2°C max;

f. Fresh fish: max. 2°C;

g. Remaining cold goods: max. 7°C.

Important:

During the picking process, these products that require refrigeration, especially at higher temperatures, must be stowed in refrigerated containers/cooling bags. If no cooling bags are available, please order them via Coupa.

8. Baked products:

  1. Bread is delivered fresh every morning;

  2. Boxes of breads shall not be stored on the floor;

  3. Baked goods shall not be further processed;

  4. Baked goods may not be stored near the HUB kitchen or sanitary area.

  5. Baked goods in paper packaging are not stored directly on the shelf, but in bread boxes / clean OG boxes.

Important:

Products or boxes with products must not be stored on the floor. However, an empty box can be placed underneath them; products must not be thrown around. See more about baked products here.

9. Products that are added free of charge to orders should be marked with a sticker:

Important:

If rain is predicted for the day in the weather forecast, it is recommended to place all trolleys from one delivery under a canopy. Alternatively, it may happen that the delivered products may get external defects.
